Gluten Free Mint Chocolate Chip Cookies
This Sunday is the St. Patrick’s Day parade in my town. As I said, St. Pat’s is a big deal for us! So, we will tailgate the parade. Which means there will be snacks, and I will need some I can eat. I made these to bring along. Yes, there is a slight green tint to them, there is creme de menthe inside!
I love mint chocolate. A LOT! In fact, I don’t think these were actually minty enough. In the future, I will add a 1/2 tsp peppermint extract. But they will do for now.
I used one package of Bob’s Red Mill Gluten Free Chocolate Chip Cookie mix. I followed the directions as is, but made a few additions. Rather than 2 tablespoons of water, I used creme de menthe. Also, I added 14 chopped up Andes candies into the batter at the end. Bake for only 13-14 minutes, instead of the suggested 15. Super easy and yummy!
